
Breakfast recipes: Mixed berries breakfast bars
You don't need to skip breakfast anymore with these grab-on-go breakfast bars. Try these healthy and delightfully chewy breakfast bars, which provide a balance of carbohydrates and good quality protein by Registered Dietitian and health blogger, Akansha Jhalani.
These bars are rich in vitamins and minerals, which will give your day a healthy kick-start.
Makes 16 bars
Ingredients:
4 cups of oats
1 cup whole wheat flour
1 whole egg and 3 egg whites
1 cup dried cranberries and blueberries
3 tbsp honey
1 cup unsweetened stewed apple puree
1 tsp ground cinnamon
1 tsp vanilla essence
2 tbsp chopped almonds
1 tsp olive oil
Method:
1. Preheat the oven to 350 oF. Coat your baking tray with olive oil. In a bowl mix flour, oats and ground cardamom.
2. In a medium bowl whisk eggs. Add stewed apple puree, honey and vanilla essence to it. Whisk until smooth. With a spatula fold in the flour mixture and add the mixed berries.
3. Transfer the mixture to a baking dish and make it even. Sprinkle it with chopped almonds. Bake it for 25-30 minutes until a toothpick comes out clean when pierced. Let the dish cool completely and cut into 16 bars
