Use corn in soups, stews or on the side along with vegetables, corns can be grilled, baked, boiled, roasted, creamed or simply cut and eaten. Today, we bring you our top 5 super healthy corn recipes delivered especially for this rain-soaked monsoon weather. 

Corn bhel salad 

Ingredients 

1 cup boiled sweet corn kernels, 1 large cucumber - finely chopped, 1 large tomato - finely chopped, 2 tbs spring onion - finely chopped, 1 tbs coconut - grated, 1 tbs green chillies - finely chopped, 1 tsp lemon juice and salt to taste. 

Method: Mix all the ingredients well and let it stay for 10 minutes, your fresh corn bhel salad is ready! 

Corn on the cob 

Ingredients

2 fresh corn, one large bowl of water, salt to taste and herbs of your choice. 

Method: Fill a large stockpot with water and bring it to a boil. Add corn on the cob to the boiling water and cover the pot. Allow the water to come to a boil. Cover pot immediately and turn off the heat. Let the corn on the cob stay like that for 10 to 15 minutes. Take out the corn and add your choice of herbs and salt to it. Make sure you don't overcook the corn and that the corn is fresh in texture. 

Avocado corn salsa 

Ingredients 

1 medium avocado, diced, 3/4 cup frozen corn, thawed, 1/2 cup quartered grape tomatoes, 1 tablespoon chopped fresh cilantro, 2 teaspoons lime juice and 1/4 teaspoon of black salt. 

Method: Toss all the ingredients together and let it stay for 10 minutes. Your fresh avocado corn salsa is ready! 

Mexican grilled corn 

Ingredients 

2 tablespoons diet mayonnaise, 2 tablespoons non-fat plain yogurt, 1/2 teaspoon chili powder, 4 husked corns, 2 tablespoon of parmesan cheese and fresh lime juice. 

Method: Preheat grill to medium high heat. In a separate bowl, combine mayo, yogurt and chilli powder. Grill corn by turning it on all sides occasionally. Spread the mixture on the corn. Garnish it with parmesan cheese and serve with fresh lime juice on the side. 

Basic corn bread 

Ingredients

1 cup corn, 1 cup whole wheat flour, 1/4th tablespoon sugar, 1 tablespoon baking powder, 1 teaspoon salt, 1 cup milk, half a tablespoon of olive oil and 1 egg. 

Method: Preheat the oven to 400. Combine all the wet ingredients in a bowl and all the dry ingredients in a separate bowl. Now pour the mixture in a greased pan, based on the thickness of the bread you would like. Bake the mixture for 20 to 25 minutes. Remove from the baking tray and serve while it is warm.
