Delicious hot Gujarati kadhi
Light and healthy the Gujarati kadhi is thin in consistency and is usually accompanied with khichdi.

Different from the Punjabi kadhi that is heavy in consistency and is accompanied with boiled potatoes or pakodas, Gujarati kadhi is like a soup. It's full of flavor and the spices blend together so magically to form this delicious, mouth watering dish.



Ingredients:
2 tbsp gram flour (besan)
500g curd
½ piece ginger
2-3 green chillies
4-5 curry leaves
2 tsp sugar (optional)
A few chopped coriander leaves
1 cinnamon stick
2 tbsp ghee/oil
A pinch of asafoetida
1 tsp turmeric powder
A few cumin seeds
Salt to taste

Method:
- Beat the curd and gram flour together with a beater and make it liquid. Keep aside.

- In a mixer grind the green chilies and ginger to form a paste. Meanwhile in a pan add the ghee/oil with a pinch of asafetida, cumin seeds, curry leaves and cinnamon. Once the cumin seeds start to putter add a glass of water and cover the pan with a lid. Let it simmer for a few minutes.

- After a few minutes add the curd in the pan and stir gently. Add the ginger-chili paste, turmeric powder, salt and sugar to the mixture is using.
